Lychee, Basil & Ginger Limeade

Our fantastic local Lychees have a very short season so we thought we should make the best of them with this festive Tipple! This is a really refreshing drink for the whole family, however you can also add your favourite spirit if you want to make it a cocktail of sorts. Either way it’s made using all LOCAL ingredients and that’s got to be a good thing!

LYCHEE, BASIL & GINGER LIMEADE

  • 1 cup lychees After peeling and removing seed
  • 3 slices fresh local ginger
  • 6 - 8 local basil leaves
  • 2 Matt’s local limes
  • 3 tablespoons sugar syrup *see note
  • 1 litre cold water

Instructions
  1. Transfer the Lychee flesh to a short, sturdy jug or metal glass. Add the ginger slices and thai basil.
  2. Add the juice of the key limes to it.
  3. Muddle the mixture with a muddler or a rounded ladle. Or you can blend it in a blender.
  4. Add the water and sugar syrup then stir well.
  5. Strain it through a fine mesh strainer into a jug
  6. Add 2-3 ice cubes to each glass and pour the limeade
  7. Top with a sprig or a few leaves of the basil.
Recipe Notes

Sugar syrup is equal parts sugar and water heated until the sugar dissolved then cooled.

You may need to add more more sugar syrup to the recipe depending on how sweet the Lychees are.
