Mexican Style Corn

Mexican Street Corn

Ingredients
  

  • 6 corn cobs husks removed and cleaned
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 3/4 cup Kenilworth hard feta cheese crumbled
  • 1/2 Teaspoon garlic powder
  • 1/4 Teaspoon sea salt flakes
  • 1/4 Teaspoon pepper
  • 8 - 10 coriander leaves chopped
  • juice of half a lime

Instructions
 

  • Place the mayonnaise, sour cream, cheese, lime juice, garlic powder, salt , pepper and half the chopped coriander leaves in a medium bowl (reserve the rest of the coriander for serving).
  • Stir to incorporate the ingredients well.
  • Grill the corn cobs on high for 6 - 8 minutes. Remove from the grill to a plate. Cover with mixture, sprinkle extra cheese over the cobs. Garnish with a sprinkling of remaining corinader and serve with line slices
